Potatoes and Eggs

Ingredients

1 Potato per serving cubed

2 Over easy eggs

1 Stock green onion diced

2Tbsp Vegetable seasonings

2Tbsp oil

*Potato seasoning

  • Garlic Salt
  • Onion Powder
  • Paprika
  • Celery Seed
  • Black Pepper
  • Oregano
  • Corrinder
  • Cummin
  • Sage
  • Dry Mustard

Directions

Wash and cube potato(s)

Pour 2 Tbsp oil into a saucepan or on a Blackstone/or electric grill, heat on Medium heat

Add potato(s) and mix well

Add Seasoning and mix well again

Cover and cook for 5-10 minutes, or until soft. Stir occasionally

Once potatoes are tender, uncover and turn the heat up to crisp the edges. Watch and when you have achieved a nice crisp remove from heat

If need be add additional oil and break two or more eggs, once the white is almost cooked, turn off the heat/or remove from heat and flip carefully

Serve eggs on top of crispy potatoes

Garnish with Green Onions
